What is katsuobushi?
Katsuobushi is very fine shavings of dried, smoked bonito. It is one of the basic ingredients of Japanese cooking.

01
What it is used for
Katsuobushi is used to make dashi, the base stock for Japanese soups and sauces. It is also sprinkled over hot dishes, where it moves with the steam and adds a smoky, salty flavour.

02
How it is made
The bonito is simmered, smoked and dried until it is as hard as a piece of wood. It is then shaved into very thin flakes with a special plane.

03
Katsuobushi at Soluna
Katsuobushi tops the kokotxa “pizza”, Soluna’s okonomiyaki with kokotxa al pil-pil. More in the kokotxa “pizza” and what is okonomiyaki.
