What is soba? Japanese buckwheat noodles
Soba are Japanese noodles made from buckwheat flour, with a toasty flavour and firm texture. They are served cold with a dipping sauce or hot in broth.

01
What is soba
Buckwheat is not a cereal but a seed, and it gives the noodles a greyish-brown colour and a toasty aroma. The purest, 100% buckwheat (juwari), are more fragile; many contain some wheat to bind the dough.

02
How they are served
Zaru soba: cold, on a bamboo tray, with a dashi, soy and mirin dipping sauce. Kake soba: hot, in a light broth. Eating soba on New Year’s Eve is traditional.

03
Difference from udon and somen
Udon is thick and made of wheat; somen is very thin and made of wheat; soba is buckwheat, medium thickness and with more character.

04
How they are cooked
Boiled briefly, cooled in iced water to fix the texture and served at once. The cooking water, called sobayu, is usually drunk at the end mixed with the dipping sauce.
