What is okonomiyaki?
Okonomiyaki is a Japanese savoury pancake cooked on a griddle. It is closely tied to Osaka, the city where Soluna’s chef, Teppei Nii, was born.

01
What the name means
“Okonomi” can be translated as “what you like” and “yaki” means “grilled”. The idea is that each okonomiyaki is completed with the ingredients its eater or cook prefers.

02
What a classic okonomiyaki is like
The base is usually a batter with cabbage and egg cooked on a griddle. It is then topped with a sweet-savoury sauce, mayonnaise and katsuobushi shavings, which move with the heat of the dish.

Okonomiyaki at Soluna
At Soluna okonomiyaki appears on the Soluna Menu and the Festival Menu. The best-known version is the kokotxa “pizza”: okonomiyaki with kokotxa al pil-pil and katsuobushi, which the Michelin Guide highlights. More in the kokotxa “pizza”.
