What is ponzu? The Japanese citrus sauce

What is ponzu
A liquid sauce based on Japanese citrus juice (yuzu, sudachi, daidai) and soy sauce. Many versions add mirin, rice vinegar, kombu and katsuobushi, which give depth and an umami background.

What it tastes like and what it pairs with
Sour and salty, with floral citrus notes. It goes with sashimi, tataki, gyoza, grilled fish, salads and grilled meats, as a table sauce or a final dressing.

A liquid sauce based on Japanese citrus juice (yuzu, sudachi, daidai) and soy sauce.

Ponzu at home
Mix lemon, orange or yuzu juice with soy sauce, a little mirin and a piece of kombu, and rest it for a few hours. The longer it rests, the rounder it gets.

Ponzu in a Japanese menu
It is a common way to lift raw or lightly cooked shellfish without masking its flavour, as with a courgette flower with langoustine and ponzu, the type of dish that has been served at Soluna.
