What is enoki? The Japanese mushroom with fine strands

What is enoki
It is the fungus Flammulina filiformis, grown in compact bunches. In the wild it is orange, but the commercial kind is grown in the dark and so is white.

Flavour and texture
Light, slightly fruity and not very earthy. Its texture is firm and a little crunchy, and it keeps its bite even when cooked.

How to clean and cook it
Cut off the hard base with the remains of the substrate, separate the strands by hand and rinse briefly. Add it at the end to soups and broths, sauté it, fry it in tempura or roll it around meat or fish.

Pickled enoki
In pickles, enoki absorbs vinegar and spices well. One example is the razor clam with pickled enoki and kimchi that has been part of Soluna menus, where the crunch of the mushroom contrasts with the shellfish.
