What is sushi? Origin, types and how it is made
Sushi is a Japanese dish whose star is vinegared rice, accompanied by fish, shellfish, vegetables or other ingredients. It does not always contain raw fish.

01
Origin of sushi
It began as a technique for preserving fish fermented with rice in Southeast Asia. In Japan it evolved, and in the Edo period (nineteenth century) nigiri appeared as we know it, as fast food from street stalls.

02
Types of sushi
Nigiri (rice with fish on top), maki (seaweed roll), uramaki (inside-out roll), temaki (hand-rolled cone), gunkan (“battleship”), chirashi (scattered rice with fish) and oshizushi (pressed), among others.

03
Rice, the key
It is cooked, seasoned with vinegar, salt and sugar and kept warm. Its texture and acidity are what distinguish a good sushi.
