What is uni? Sea urchin in Japanese cuisine
Uni is the gonads of the sea urchin, intense orange in colour and creamy in texture. Its flavour is sweet, marine and buttery, one of the most prized delicacies in sushi.

01
What is uni
Not the roe of the urchin but its reproductive organs, carefully extracted from the shell. It is harvested in specific seasons, depending on species and origin.

02
What it tastes like
Sweet, salty and mineral, with a creamy texture. When fresh it has no strong smell; if it does, it is not at its best.

03
How it is served
On rice in nigiri or gunkan wrapped in nori, in chirashi, in pasta or in creams. Sometimes served directly in the shell.

04
Storage
Very perishable. It is transported in trays with wooden dividers and eaten within a few days.
