What are gyoza

Of Chinese origin (jiaozi), they reached Japan in the twentieth century and became a staple of izakayas and ramen shops. The wrapper is thinner than the Chinese one and the filling finer, with garlic and ginger.

How they are cooked

Browned in a pan with oil, a splash of water is added and the pan is covered so they steam, then uncovered at the end to crisp the base. The result: a golden base and a soft top.
