What are gyoza? Japanese dumplings
Gyoza are Japanese dumplings with a thin wrapper filled with pork, cabbage and chives, browned on one side and steamed.

01
What are gyoza
Of Chinese origin (jiaozi), they reached Japan in the twentieth century and became a staple of izakayas and ramen shops. The wrapper is thinner than the Chinese one and the filling finer, with garlic and ginger.

02
How they are cooked
Browned in a pan with oil, a splash of water is added and the pan is covered so they steam, then uncovered at the end to crisp the base. The result: a golden base and a soft top.

03
Alternative fillings
Chicken, prawns, vegetables, mushrooms or cheese. There are fried versions (age gyoza) and ones cooked in broth (sui gyoza).

04
What they are served with
A dipping sauce of soy sauce and rice vinegar, sometimes with a few drops of chilli oil (rayu). They go well with beer.
