What is temaki? The sushi cone eaten by hand
Temaki is a cone of nori filled with sushi rice, fish and vegetables, eaten by hand. Its name means “hand roll”.

01
What is temaki
It is prepared on the spot: half a sheet of nori is held in the hand, a layer of rice is spread, the filling is added and it is rolled into a cone.

02
Why it is eaten at once
The seaweed absorbs moisture from the rice and loses its crunch within minutes. That is why it is best eaten freshly assembled.

It is prepared on the spot: half a sheet of nori is held in the hand, a layer of rice is spread, the filling is added and it is rolled into a cone.

03
Common fillings
Chopped tuna with spring onion, salmon with avocado, prawn, eel or cucumber. In contemporary cooking, fillings such as red prawn tartare.

04
In a tasting menu
It is a fun, approachable course that breaks the solemnity of service, like the red prawn tartare temaki that has been part of Soluna menus.
