What is temaki

It is prepared on the spot: half a sheet of nori is held in the hand, a layer of rice is spread, the filling is added and it is rolled into a cone.

Why it is eaten at once

The seaweed absorbs moisture from the rice and loses its crunch within minutes. That is why it is best eaten freshly assembled.
