How to eat sushi correctly: a practical guide

Chopsticks or hands?
Nigiri can be taken by hand or with chopsticks; both are correct. Sashimi is taken with chopsticks. Maki can be eaten by hand.

Soy sauce
Dip the fish, not the rice: rice absorbs too much soy and falls apart. A drop is enough. There is no need to mix wasabi into the soy: put a little directly on the piece if the chef has not already added it.

Pickled ginger
Gari cleanses the palate between pieces of different flavour. It is not eaten with the piece but between one and the next.

The ideal order
Start with white, mild fish, move on to fattier or stronger ones and finish with sweet pieces, such as tamago, or with a maki. If you are at a counter with a chef, let their order guide you.

One bite
Each piece is designed to be eaten in a single bite. That way you appreciate the temperature of the rice, the fish and the aroma of the wasabi together.
