What is kakigori? The Japanese shaved-ice dessert
Kakigori is a Japanese dessert of finely shaved ice flavoured with syrups, fruit or infusions. Its texture is like fresh snow, very different from a granita.

01
What is kakigori
Ice shaved into ultra-thin layers that is piled in a bowl and flavoured. Its origin goes back centuries, when the Japanese aristocracy stored winter ice for summer.

02
How the texture is achieved
Block ice, frozen slowly and often from filtered water, is shaved with a dedicated machine. The slower it freezes, the clearer and more delicate the result.

Classic and modern flavours
Classics include matcha, strawberry, azuki (sweet red bean) and condensed milk. Contemporary versions use seasonal fruit, rose water, yuzu or light creams.

Kakigori in a menu
As a dessert or a refreshing pre-dessert, kakigori cleanses the palate after a sequence of intense flavours. A rose-water version has been part of Soluna menus.
