What is mirin

Made by fermenting glutinous rice with koji and a distilled spirit. The result is an amber liquid with sweet notes and a touch of alcohol that evaporates when cooked.

Difference from sake and rice vinegar

Sake is a drier, stronger drink; rice vinegar is sour. Mirin is sweet and almost always used in cooking. It rounds off flavours and gives glazes their characteristic shine.

How to choose mirin

Look for quality mirin (hon-mirin) made the traditional way. Synthetic seasonings often contain syrup and flavourings and taste flatter.
