What is sake? Japan’s fermented rice drink

Sake, or nihonshu, is a Japanese alcoholic drink made from fermented rice. At about 14–16% ABV, it is closer to wine than to a spirit.

What is sake

Made from polished rice, water, yeast and koji. Unlike beer, the conversion of starch to sugar and the fermentation happen at the same time, known as multiple parallel fermentation.

The more the grain is polished, the more fat and protein are removed and the more delicate the sake. Daiginjo are made with heavily polished rice.

Sake and gastronomy

Its umami and low acidity make it very food-friendly. It accompanies everything from sashimi to meat, and is a good partner for a multi-course menu.
