What is sashimi? Sliced raw fish, Japanese style

What is sashimi
The word means “pierced body”. The fish is sliced with a long, sharp knife (yanagiba) in a single clean motion, so as not to tear the fibres.

Difference between sashimi and sushi
Sushi is vinegared rice with fish, vegetables or other ingredients. Sashimi has no rice: it is just raw produce. It may be served with wasabi, soy sauce, grated daikon and shiso leaves.

Common fish
Tuna (akami, chutoro, otoro), salmon, sea bass, sea bream, horse mackerel (aji), scallop, prawn or octopus. The choice depends on the season and on ageing, as some fish improve after a few days of rest.

Safety and freshness
Fish for raw consumption must meet health regulations and be frozen beforehand when required. A serious restaurant works with trusted suppliers and controls the cold chain.
