What is tonkatsu? The Japanese breaded pork cutlet
Tonkatsu is a pork cutlet breaded in panko and fried, served sliced with shredded cabbage and a thick sauce. It is one of the best-loved dishes of everyday Japanese cooking.

01
What is tonkatsu
The pork is dusted with flour, egg and panko (Japanese breadcrumbs, coarser and lighter) and fried until golden. It is crisp outside and juicy inside.

02
How it is served
Cut into strips, with very finely shredded cabbage, rice, miso soup and tonkatsu sauce (sweet, sour and fruity). Accompanied by mustard.

The pork is dusted with flour, egg and panko (Japanese breadcrumbs, coarser and lighter) and fried until golden.

03
Variants
Hire katsu (tenderloin), rosu katsu (loin with fat), katsu sando (in a sandwich) and katsu curry (with Japanese curry).

04
The secret of panko
Its irregular crumb absorbs less oil and gives a crisper, lighter texture than traditional breadcrumbs.
