What is truffle? Types, season and how it is used
Truffle is an underground fungus with an intense, complex aroma, sought out with trained dogs. It is one of the most expensive and desired ingredients in haute cuisine.

01
What is truffle
It grows underground in symbiosis with tree roots such as holm oak or oak. It is not easily cultivated and its aroma is unmistakable: earthy, woodland, with hints of garlic and musk.

02
Types of truffle
Black (Tuber melanosporum) is harvested in winter; white (Tuber magnatum) is autumnal and very expensive; summer truffle (Tuber aestivum) is milder and harvested in the warm months.

It grows underground in symbiosis with tree roots such as holm oak or oak.

03
How it is used
Grated or sliced at the last moment over warm dishes. Its aroma is lost with long cooking, so it is usually added at the end.

04
Truffle and Japanese cooking
Its umami profile suits dashi, miso and shellfish. It is a way to add earthy depth to delicate dishes, as in a lobster with dashi and summer truffle.
