What is A5 wagyu? Japan’s most marbled beef

What wagyu means
Wagyu means “Japanese cow”. These are native Japanese breeds, such as Kuroge Washu (Japanese Black), raised with careful feeding and handling.

What A5 means
The letter indicates the meat yield per carcass (A, B or C) and the number the quality according to marbling, colour, firmness and fat shine (from 1 to 5). A5 is the highest level on both counts.

Marbling and flavour
Intramuscular fat melts at a low temperature, giving juiciness and a sweet, buttery taste. Because of its richness it is served in small portions, grilled or seared, very rare.
