What is yakitori? Japanese skewers over charcoal
Yakitori are Japanese chicken skewers grilled over charcoal, usually binchotan, and served with salt or a sweet-salty sauce called tare.

01
What is yakitori
It literally means “grilled chicken”. Although associated with chicken, the term extends to skewers of vegetables, mushrooms or pork belly. They are cooked over small embers, turned for even browning.

02
Parts of the chicken
Thigh with spring onion (negima), breast (mune), skin (kawa), gizzards, liver (reba), wings (tebasaki) or meatballs (tsukune). Each cut has its own point and style of seasoning.

Salt or tare
Shio (salt) highlights the flavour of the bird; tare is a sauce of soy sauce, mirin, sake and sugar that reduces and caramelises. Some places keep the same tare going for years.

04
How to enjoy it
Ideally straight off the grill, with beer or sake. It is ordered in rounds, at the counter, as in a good izakaya.
